Regarding the hummus - dipping pita triangles in it is not an Asian custom but rather an American invention. Here in the middle-east the hummus is not a dip but a spread, and it is not used as an addition to anything else but as the center of a whole meal.

A plate of good hummus with some vegetable salad on the side is a nutritiously complete meal.

Australia is right on Asia's doorstep, and many migrants from all over Asia have made it their home -- including my sister-in-law, Vivian. Over the last 50 or so years many migrants from Mediterranean cultures (particularly Greeks and Italians) have also settled in Australia, bringing their own cultural and gastronomic influences.

So you're right, it's a real cultural melting pot, with a distinct Asian and Mediterranean influence. As you can probably tell, a lot of those influences have rubbed off on me. :D

Great list of ideas! Paula definitely asked the magic question, didn't she? :)

I was thinking your beloved Australia must have all kinds of interesting influences on the local cuisine, just because of where it is geographically and the different groups of people that have passed through there over the years. I imagine there's an Asian influence in addition to the European. Would love to hear more about that sometime, though that might need a whole other post. ;)
