I&#039;m from Romania, and we have a similar no-stir version for polenta, where we dump everything in, let it cook, and stir at the end. I just bought a RiceSelect blend with brown and red rice, and barley and rye, and wanted to try a mushier-type rice with it, like risotto. I&#039;m not sure if it will work, but arborio rice is so expensive (not to mention less nutritional because it&#039;s white) and I don&#039;t care for the risotto to be &quot;just right&quot;...</description>

		<description>I&#039;ve always been rather intimidated by risotto, so I&#039;ve never attempted cooking it.  However, this recipe makes it seem within my abilities!  I&#039;m really quite excited to try it!

By the way, this site and http://www.mediterrasian.com are fabulous.  It&#039;s exactly the kind of food I&#039;ve grown into cooking, so it gets me back on track when I need it and also reassures me when the vegan and raw food dieters start getting to me.
